The Historical Journey of Turkish Delight

Derived from the Ottoman word 'rahat ul-hulküm,' meaning 'comforting the throat,' 'lokum' (Turkish delight) has been known in Anatolia since approximately the 15th century. Turkish delight became widespread, especially within the borders of the Ottoman Empire, in the 17th century.

At the end of the 18th century, Muhittin Hacı Bekir produced Turkish delight by pressing it from hard candies. Upon the request of Abdülhamit I for soft confectionery, a competition was held, and Muhittin Hacı Bekir won first place. Regardless of whether it was invented in the 18th or 15th century, it is undeniable that Ali Muhittin Hacı Bekir was the person who mass-produced, popularized, and introduced Turkish delight to Europe. In Europe, Turkish delight became known as 'Turkish Delight' in the 18th century through an English traveler. Previously made with a mixture of honey or molasses and flour, the method of making Turkish delight and its taste changed significantly in the 17th century thanks to the discovery and introduction of refined sugar, known as 'Kelle şekeri,' and especially starch.

Today, many varieties of Turkish delight are produced, including plain, hazelnut, pistachio, walnut, almond, coconut, orange, rose petal, strawberry, and lemon, as well as clotted cream, mint, vanilla, and ginger flavored ones. The appearance of Turkish delight should be specific to its type and maintain its given shape; its texture should be elastic, capable of regaining its original form after being pressed with a finger, and should feel soft and slippery in the mouth.
