The Historical Journey of Turkish Delight

Derived from the Ottoman word ‘rahat ul-hulküm’, meaning "to soothe the throat", 'lokum' (Turkish Delight) has been known in Anatolia since approximately the 15th century. Turkish Delight became widespread, especially within the borders of the Ottoman Empire in the 17th century.

Towards the end of the 18th century, Turkish Delight was produced by Muhittin Hacı Bekir by pressing hard candies. A competition was launched at the request of Abdul Hamid I for a soft confectionery, and Muhittin Hacı Bekir won this competition. Nevertheless, whether invented in the 18th or 15th century, it is undeniable that Ali Muhittin Hacı Bekir was the person who mass-produced, popularized, and introduced Turkish Delight to Europe. In Europe, Turkish Delight began to be known as 'Turkish Delight' in the 18th century, through an English traveler. Previously made with a mixture of honey or molasses and flour, the method of production and taste of Turkish Delight changed in the 17th century, thanks to the discovery and introduction of refined sugar, known as 'Kelle şekeri' (loaf sugar), and especially starch into the country.

Today, many varieties of Turkish Delight are produced, including plain, hazelnut, pistachio, walnut, almond, coconut, orange, rose petal, strawberry, and lemon, as well as clotted cream (kaymak), mint, vanilla, and ginger Turkish Delights. The appearance of Turkish Delight should be specific to its type and retain its given shape; its texture should be elastic, capable of returning to its original form after being pressed with a finger, and should feel soft and smooth in the mouth.
