The Historical Journey of Turkish Delight
Derived from the Ottoman word 'rahat ul-hulküm', meaning "comforting the throat", 'lokum' (Turkish Delight) has been known in Anatolia since approximately the 15th century. Turkish Delight became particularly widespread within the borders of the Ottoman Empire in the 17th century.
At the end of the 18th century, Turkish Delight was developed by Muhittin Hacı Bekir by pressing hard candies. Upon the request of Abdul Hamid I for a soft confection, a competition was held, and Muhittin Hacı Bekir won first place. Nevertheless, whether invented in the 18th or 15th century, it is indisputable that Ali Muhittin Hacı Bekir was the person who mass-produced, popularized, and introduced Turkish Delight to Europe. In Europe, Turkish Delight became known as 'Turkish Delight' in the 18th century through an English traveler. Previously made with a mixture of honey or molasses and flour, the method of production and taste of Turkish Delight changed in the 17th century thanks to the discovery and introduction of refined sugar, known as 'Kelle şekeri', and especially starch, into the country.
