Turkish Coffee

Turkish Coffee is the name of the coffee preparation and brewing technique discovered by the Turks. Turkish Coffee has its own unique identity, culture, and tradition. The drink, initially obtained by boiling coffee fruit in the Arabian Peninsula, achieved its true coffee flavor and unique aroma with this brand new preparation and brewing method.

During the reign of Yavuz Sultan Selim (1517), Özdemir Pasha, the Governor of Yemen, brought the coffee he drank and loved in Yemen to Istanbul. Coffee quickly took its place in the palace kitchen as a prestigious drink and garnered great interest. A rank called "kahvecibaşı" (chief coffee maker) was added to the palace duties. The kahvecibaşı, responsible for brewing the coffee of the Sultan or a high-ranking statesman, was chosen from among the loyal and those who could keep secrets. In Ottoman history, there were even those who rose from kahvecibaşı to Grand Vizier.

Entering from the palace to mansions and then to homes, coffee quickly became a beloved flavor for the people of Istanbul. Purchased raw coffee beans were roasted in pans, ground in mortars, and then brewed in 'cezves' (small long-handled pots).

In 1554, two Syrian Arabs (Hakem from Aleppo and Şems from Damascus) opened the first coffee house in Tahtakale, Istanbul. At that time, whether coffee was beneficial or not was a subject of debate. Sheikh al-Islam Bostanzade Mehmet Efendi issued a fatwa stating that coffee was not forbidden and was beneficial.

Venetian merchants who came to Istanbul carried this much-loved beverage to Venice. Thus, Europeans encountered coffee for the first time in 1615. Initially sold on the streets by lemonade vendors, coffee found its place in Italy's first coffee house, which opened in 1645. These coffee houses, rapidly increasing in number, became favorite places where artists, students, and people from all walks of life gathered to socialize, just like in many other countries. Coffee reached London in 1654 and Paris in 1699.

· As sugar is added during preparation according to preference, it is the only type of coffee served ready to drink.
· It is considered by coffee enthusiasts as the only coffee that can be boiled and drunk.
· It is unique because its coffee is inside the cup.
· It is healthy because the grounds accumulated at the bottom of the cup are not consumed.

How to brew Turkish Coffee?

To make a delightful Turkish coffee, you should have the right equipment:

· Wide-mouthed, long-handled copper 'cezve'
· Porcelain coffee cups · Finely (powder-like) ground Turkish Coffee · Suitable water: Water that is too hard or too soft negatively affects the taste of the coffee.
Turkish coffee is generally prepared in 4 different ways. Before brewing the coffee, the person who will drink it should always be asked how they prefer their coffee.

· Plain coffee is made without sugar.
· Lightly sweetened coffee uses 1 teaspoon of sugar,
· Medium sweetened coffee uses 2 teaspoons of sugar,
· Very sweet coffee uses 3 teaspoons of sugar.

For each cup of coffee in the 'cezve'; add one cup of water, 2 teaspoons of coffee (5-6g), and sugar. Stir well, place the 'cezve' over low heat, and slowly bring it to a boil. The slower the coffee is brewed over low heat, the more flavorful it becomes. Once it starts to boil, distribute the foam that forms on top into the cups, boil again, and then distribute the remaining coffee into the cups. When served, coffee is presented in its distinctive porcelain Turkish coffee cup.

An important characteristic of Turkish coffee is its grounds. This method, pioneered by the Turks who first served coffee with its grounds, is a form of coffee prepared with the maximum amount of coffee beans, allowing the full coffee taste to be experienced. The foam on top of the coffee is a detail that prevents it from cooling down and its aroma from escaping.

Why is water drunk before coffee?

In Turkish coffee culture, a glass of water is served alongside the coffee. As coffee aids digestion and is enjoyable after a meal, water is drunk before coffee to cleanse the palate. This way, the taste of the coffee can be better appreciated.

It is customary in our culture to always have coffee after red meat dishes. A well-made Turkish coffee is topped with foam, and in Turkish tradition, the cup with the most foam is offered to the guest or the eldest person. To ensure the coffee is foamy, a copper 'cezve' of the correct size must be chosen. For this reason, every Turkish family has 'cezve' sets ranging in size from single-cup to four-cup capacity.

What was the Ottoman etiquette for coffee service?

When a guest arrived at a house; if the guest was hungry, they would take water, if they were full, they would take coffee. If they took water, the host would subtly understand this, immediately set the table, and feed the guest. The host would serve their guest with the most special porcelain coffee cup.
